So this week I decided that I was going to make pickle-o's. For those of you that have no idea what I'm talking about......
Our Sonic sells them and they are battered and fried dill pickle slices that you eat with ranch dressing. They are delicious! Seth's cousins, Tisha & Shannon, got me hooked on them when they were here a while back. Well Sonic requires me to get dressed, put the dogs up, drive into town....yada yada yada.....
So today I decided I would attempt to make them myself. So here's the recipe I came up with. Keep in mind I need to practice some more but they were amazingly good for my first try.
1/2 cup corn meal
1/4 bread rumbs (I use Panko)
1 cup milk
Pickle slices
I started my deep fryer so it would be hot by the time I got ready to fry the pickles. I mixed the bread crumbs and corn meal in a small bowl. Dipped the pickles in the milk and then battered them in the corn meal mixture. Then I fried them for like 1 minute maybe less.....it depends on how hot your grease is. I promise they are delicious!! You want them to be a golden brown color and it's normal for the pickles to be a tad bit soft. Enjoy!!
